Galette with frangipane with speculos

Here is an original cake recipe with speculos. This cake is consumed at room temperature, but it is even better slightly lukewarm.


  • For 6 persons :
  • 2 puff pastries
  • 30 g white almond powder
  • 30 g of butter
  • 30 g of sugar
  • 2 eggs
  • 30 ml vanilla custard cream
  • 65 g of speculos paste
  • 30 g of biscuits
  • 1 egg for gilding


In a salad bowl, add the ointment butter (soft butter, not melted), the sugar, and mix until the filling is whitened. Add the almond powder, the 2 eggs (whole) and mix. Add the cold pastry cream, the speculos dough and mix. Place a dough in a pie plate or on the baking sheet covered with baking paper and prick it with a fork. Pass a brush dipped in cold water on 2 cm of the inner edges to facilitate adhesion. Garnish with the frangipane about 1.5 cm high, place the bean on one edge (to minimize the chances of falling on it by cutting the cake!). Sprinkle with some speculos. Close the cake with the second dough, and stick the edges well (seal the edges with a little water). Brush evenly the surface of the cake in 2 times, waiting a good quarter of an hour between each layer, then decorate according to your desires and let rest a few hours in the refrigerator. Bake the pancake at 175 ° for 40/45 minutes (previously preheated oven).
